Gluten Free & Me & You

As some of you might be aware, I am gluten-free.  Last June I decided to try out being gluten-free to see if that was the cause of all my “intestinal discomfort”.  I had been sick one day June 2012, for a few hours, and that evening I looked up possible reasons because as far as I knew, I hadn’t eaten anything that was on my usual Do No Eat list.  My sister suggested I check to see if maybe I was gluten intolerant, wouldn’t that suck.  Yeah a bit.  Turns out I had about 10-15 of the symptoms, and they ranged from my intestinal problems, to fatigue and personality traits!  That’s when I decided I should at least give it a go and see how it feels.

I believe it has been a full year since going gluten free and while I miss some foods I used to really enjoy, I feel SO MUCH BETTER.  Its definitely a more positive outlook for my intestinal health than it was a year ago, plus some personality changes that aren’t so bad either 🙂

More to the point, I like to experiment with cooking and had original hoped to share some of my recipes and foods that I make with you all.  But now I am wondering if anyone would be interested on my thought of gluten free pre-packaged foods or from restaurants.  Or when I make something gluten free if anyone is curious about the recipe and how it turned out?

This you will totally see in my Year of Something New.  Currently I have deviated from my previous February plans, I just haven’t filled you all in on the “why” yet.  Soon though, soon!  Its a big deal, and I’m pretty excited about it 🙂

Anyway, I love to try new things, I love to taste new foods and drinks, meet new people!  I will often try something new before choosing something I’ve already done, even if I really like it, if given the option.  “I wanna go!”  …. “I’ll eat it!”  …. are typical things you will hear me say!

Hi, my name is Jessica Anderson and I wear many hats! I am a full time Design Project Manager for an automotive finishes company, I do freelance graphic design work, run an Etsy shop, sell Mary Kay and recently helped my husband start his own direct sales business…AND I am mom to two beautiful little boys (look at those cute kids!). My amazing husband is a full time stay at home dad right now so I can work full time in the corporate world, but we pray that is only temporary. My boys, Laithan and Lachlan will both have birthdays next month so in addition to everything else I’m busy planning a joint 3rd and 1st birthday party! Dinosaur themed! (T-Rex…clap!)

I have been a Mary Kay Independent Beauty Consultant for over a year now. My business has recently started taking off based on my being able to focus more time on it, which is really all it needs! The products sell themselves! (Its true, I use Mary Kay everything, I love all their products!  Lip Glosses RULE!)  I use the Eye Revitalizer every day and I love their Mineral Powder Foundation and Ultimate Mascara. Those are the products that really sold me. I chose to become a Consultant after speaking with a friend and neighbor about the opportunity. At the time I was 5 months pregnant and really feeling a calling to stay at home to raise my boys.
